Italian Orange Salad
This salad is a family favorite!
This Italian Classic is great for any summer celebration! Whether it is just a Sunday night dinner, or a BBQ outside with family and friends, this salad is always a hit. You can substitute oranges for grapefruit, or oil and vinegar instead of Thousand Island dressing too. Some Italians through a garish of radicchio or arugula. Whichever variations you prefer, the citrus avocado combination will make anything delish!

Ingredients
- 6 Oranges, Peeled and Sliced
- 5 Avocados, Peeled and Sliced
- 1/2 lb. Prosciutto, Thinly Sliced
- 4 tablespoons Thousand Island Dressing
- A pinch Salt and Pepper
Cooking Directions
- Peel and slice your oranges into small, thin pieces.
- Do the same to your avocado, carefully peel and slice your avocado into relatively thin slices.
- Once your fruit is cut as uniformly as possible, arrange them around the plate.
- Carefully drizzle the Thousand Island dressing around both the avocados, and the oranges.
- Sprinkle salt and pepper throughout.
- Take a thin slice of prosciutto, and lay gently across the avocado and citrus salad.
- Viola! Serve this salad chilled.
This dish is not only delicious, but a healthy alternative to other side dishes. Oranges have great antioxidant properties and are filled with vitamins. Avocados are "heart healthy" and provide you with the good kind of fats your body needs. They are also a very LOW source of carbohydrates. To make your salad even healthier, opt for the olive oil and balsamic vinegar dressing instead of the thousand island to cut out some fat!
